Tuna Light

Serves 2

Tuna Light is delicious as a sandwich filling, served on a bed of chilled salad green or stuffed in a tomato!  It is also great tossed with your favorite pasta salad.


Sometimes you don't really need a recipe. Just add ingredients to taste – a little bit at a time.

1 can solid white albacore Tuna, packed in water
Lemon Zest Grapeseed Oil
Key Lime Vinegar
Lemon Sea Salt
3-Lemon Pepper

Drain the water from a can of solid white albacore tuna.  Put the tuna into a small bowl and flake with a fork.   Moisten to desired consistency with Lemon Zest Grapeseed Oil.  Sprinkle with a little Key Lime Vinegar, a pinch of Lemon Sea, and a pinch of 3-lemon pepper. Blend in a little Dijon mustard and the tiniest bit of cayenne pepper.

Cook's Notes:

Tuna is best served ice cold shortly after you prepare it.  That said, you can store prepared tuna safely in the refrigerator for 1-2 days.
