Roasted Potatoes With White Truffle Oil using Products from The Posh Gourmet Recipe courtesy Sandie Jarrett Serves 4 |

Ingredients
1 pound baking potatoes, scrubbed
clean, blemishes removed Method Preheat oven to 400 degrees F. Cut cleaned potatoes into quarters and then into 2/3 inch pieces. Put into large bowl. Add onion, garlic, and seasonings. Drizzle with 3 tablespoons of olive oil and toss to coat. Add more olive oil if necessary. Transfer the potato mixture to foil lined baking sheet and spread out in a single layer. Place in oven and cook for about 40 minutes. The potatoes are done when they are fork tender and lightly browned. Transfer the cooked potatoes to a warm serving dish. Drizzle with Truffle Oil (about 1/2 teaspoon) and gently toss to coat. Drizzle with an additional 1/2 teaspoon of Truffle Oil if desired. Serve at once, piping hot and enjoy! Cook's Notes:
