Roasted Potatoes With White Truffle Oil

Serves 4 


1 pound baking potatoes, scrubbed clean, blemishes removed
Olive Oil to moisten potatoes (about 3 - 4 tablespoons)
1 medium red onion,  thinly sliced
2 cloves garlic, minced
1 - 2 pinches Fennel Citrus House Blend Seasoning
Pinch sea salt
Pinch freshly ground black pepper
White Truffle Oil


Preheat oven to 400 degrees F.

Cut cleaned potatoes into quarters and then into 2/3 inch pieces.  Put into large bowl.  Add onion, garlic, and seasonings. Drizzle with 3 tablespoons of olive oil and toss to coat.  Add more olive oil if necessary.  Transfer the potato mixture to foil lined baking sheet and spread out in a single layer.  Place in oven and cook for about 40 minutes.  The potatoes are done when they are fork tender and lightly browned. 

Transfer the cooked potatoes to a warm serving dish.  Drizzle with Truffle Oil (about 1/2 teaspoon) and gently toss to coat.  Drizzle with an additional 1/2 teaspoon of Truffle Oil if desired. 

Serve at once, piping hot and enjoy!
