Posh Stuffed Mushrooms

So – you think you can't cook or you don't have time?  Why not give these show-stopping starters a try?  They are delicious and so easy to make that you will find yourself making them again and again.  The best part is that you can stuff them with a variety of ingredients - just let you personal taste and imagination be your guide!  Your biggest problem will be handling all of the compliments you'll receive each time you serve these delectable gems.

The best mushrooms for stuffing are small Portabellas known also as Cremino or Cremini (brown) mushrooms with about 2” diameter caps.  If these dramatically flavored beauties are unavailable, then large white mushrooms will do. 

First, remove the stems, and brush off any soil.  Avoid ’washing’ - mushrooms contain an abundance of moisture already.  If more thorough cleaning is necessary, use a damp paper towel to gently clean.

Place mushrooms, top side down, on a microwave-safe plate.  Fill each mushroom and microwave on high, 20 seconds at a time, until the mushrooms have softened slightly, and the filling is warm.  Avoid over cooking the mushrooms or they will lose their moisture and become soggy. 

A Few of our Favorite Fillings:

Place a small slice of mozzarella cheese in mushroom, then top with Artichoke Tapenade and top with a few fresh Oregano leaves

Place a spoonful of Portabella Mushroom Tapenade in mushroom, then top with feta cheese and a sprinkle of chopped fresh parsley for a double mushroom delight.

Place a slice of mozzarella cheese in mushroom, then top with a Marinated Sun-dried Tomato slice and a sprinkle of minced basil.

Place a spoonful of Basil Pesto in mushroom, then top with Parmesan cheese and lemon zest garnish.

Place a little crumbled cooked Italian sausage in mushroom, then top with a dollop of Roasted Tomato Balsamic Dipping Sauce and a thin slice of mozzarella cheese.

Hint:  When stuffing mushrooms, skip the oil.  For a fuller flavor, drizzle with oil after heating.
