Grilled Asparagus Salad Recipe using Products from The Posh Gourmet Recipe courtesy Sandie Jarrett Adding healthy, delicious, Mediterranean foods to your diet has been associated with many health benefits. Lightly grilled fresh asparagus drizzled with lemon juice and extra virgin olive oil is a quick and tasty way to add fresh Mediterranean foods to your diet. You can prepare this delicious side dish in so many different ways. It is great served hot or chilled. Grill over charcoal, gas, or an electric grill. You can even broil the asparagus. Substitute crumbled Feta Cheese or vegetable salsa for the chopped egg. Serve with grilled fish or poultry.

Ingredients
1 1/2 pounds fresh
asparagus (thick spears) Method Preheat grill to medium. Trim the dry ends off the asparagus and place on a baking sheet. Drizzle with 2 tablespoons extra virgin olive oil, rolling spears over to coat both sides. Sprinkle with sea salt and black pepper to taste. Place the spears on preheated grill** rack crosswise. Grill until tender-crisp and slightly charred, about 5 - 7 minutes. Turn occasionally to keep from burning. Transfer cooked asparagus to a platter. Drizzle with lemon juice and 2 tablespoons extra virgin olive oil. Sprinkle with chopped eggs, parmesan cheese, and lemon zest. Serve hot or cover with plastic wrap and chill**** for up to 24 hours. Cook's Notes: *Zest lemon before juicing. ** Charcoal grill - grill uncovered, directly over medium hot coals until cooked. *** Gas grill - heat grill, then turn down heat to medium before putting asparagus on rack. Grill covered, until cooked. ****When chilling overnight, remove the grilled spears from the grill and allow to cool. Cover and refrigerate. Right before serving, remove from the refrigerator, arrange spears on a chilled platter, and then continue with directions. Serve and enjoy.
