Rice: The
Other StarchAlthough potatoes are one of my favorite foods, lately I have
been craving something a little different – perhaps a little lighter. As it
turns out, that something is rice. Rice is versatile; it can be prepared in so
many different ways – from simple to complex and from savory to sweet. Rice
salads are easy and delicious – and a welcome alternative to potato or macaroni
salads. Rice can be fruited or jeweled or prepared as a pilaf. And for
dessert, what could be better than sweet, creamy, rice pudding?
Rice is also inexpensive; added to a pound
of ground meat along with diced vegetables and seasonings, rice can be served as
a tasty main dish. Stretch out stew by serving over a scoop of cooked white
rice or serve unadorned as a satisfying side dish to meat, fish, or poultry.
Rice is a cholesterol-free, sodium-free,
gluten-free, easily digested, non-allergenic complex carbohydrate that contains
only a trace of fat! According to USA Rice Federation, "Rice protein, when
compared to that of other grains, is considered one of the highest quality
proteins. It has all eight of the essential amino acids, necessary building
blocks for strong muscles.
Rice is also a good source of other essential
nutrients - thiamin, riboflavin, niacin, phosphorus, iron, and potassium. Rice
is healthful for what it does not contain as well. It has only a trace of fat,
no cholesterol and no sodium. This along with being non-allergenic and gluten
free, makes rice especially well suited for persons with special dietary needs."
Rice is a delicious, nutritious grain that
can be served plain or fancy, savory or sweet. Rice naturally contains thiamin,
niacin and iron and is a high quality protein. Brown rice has had only the
inedible outer husks removed. Although it takes twice as long to cook as white
rice, it has a wonderful, nutty flavor and a slightly chewy texture.
Probably the most widely used of all rice,
white rice has had the hull and bran layers removed. During the milling
process, the quantity of some of rice's valuable nutrients is reduced. In the
United States, thiamin, niacin, and iron are added back to white rice along with
folic acid.
White rice has a mild flavor and is the most
versatile. Aromatic rice such as Basmati, Jasmine, Pecan, Popcorn, Wehani, and
Texmati add flavor and variety to a meal. Another popular white rice is
Arborio. With its high starch content, it is the rice most often associated
with the classic Italian dish Risotto.
