Cans and jars of ingredients should taste, smell, and look as good as if you had labored over a hot stove for hours.  Jars of Basil Pesto should  be an appealing green in color and smell of basil  and Parmesan cheese.  Olive Oil should have a lively aroma.  That's why we taste every product before we offer it to our customers. 

The Basic Cooks Pantry - you'll use these basic ingredients over and over again

• Bulk Sea Salt or Kosher Salt - everyday grind
• Citrus Sea Salt
• Celery Sea Salt
• Peppered Salt
• One or two additional Sea Salt Blends of your choice
• A good quality Dijon-style Mustard - Cooks Illustrated gave classic Grey Poupon Dijon Mustard a thumbs up
• Black Peppercorns and adjustable grinder
• Good quality butter (store a few cubes in the freezer so you will always have some on hand)
• Good quality everyday all-purpose Olive Oil
• Gourmet quality Extra Virgin Olive Oil
• Balsamic Vinegar
• Basic assortment of dried herbs - oregano, thyme, sage, rosemary, bay leaves,
• Corn starch (for thickening)
• All purpose flour (for Roux and thickening gravies and sauces)

The Mediterranean Pantry - add these foods and ingredients to the Basic Pantry

• Aged Balsamic Vinegar of Modena
• Basil Pesto
• Olive tapenade
• Assorted dried herbs and spices - basil, capers,
• Tomato products - diced, sauce, paste
• Assorted pasta - penne, spaghetti, fettuccine
• Good quality pasta sauce
• Dried figs

• Bread Dipping Oil - one or more as a dip for warm chunks of country bread

The California Wine Country Pantry - add these foods and ingredients to the Basic Pantry

• Wine Vinegar - Champagne, Cabernet, or other vinegars made from varietals
• Flavored Grape Seed Oils
• Wine based grilling sauces and marinades - Blackberry Grilling Sauce, Citrus Soy Marinade
• Bread Dipping Oil - one or more for dipping bread and for sautéing meats, fish, and chicken and a base for marinades and dressings.
